Gainesville Resident Rae Rogers Wins Best in Culinary Portfolio Show at The Art Institute of Atlanta
Rae Rogers, a culinary arts student at The Art Institute of Atlanta, was awarded the honor of best portfolio in culinary arts for spring quarter with her proposal for expanding her mother’s much-loved Gainesville restaurant, The Smoke House. Rae’s mom, Wayne Vaughan, opened The Smoke House in 1980 and it has been a favorite with folks in the Gainesville area ever since. The culinary arts portfolio project involves creating a business plan for a food service operation, including market analysis and strategy, operating budget, sales projections, inventory, capital equipment, standardized recipes, menu, and facility design.
Rae, who lives in the North Forsyth County area, will receive her associate in arts degree in culinary arts in December.
