In this course students learn, in a live environment, the skills and techniques of the front of the house personnel. Students rotate through all of the dining room positions, from waiter to manager, learning and practicing their skills in front of real customers in our public dining facility. Emphasis is on the basic serving techniques and on customer satisfaction. Students are also exposed to practical management theory application utilizing a point of sale computer system. CU1003A A’ la Carte (Menu Management)
This course introduces the fundamentals of menu design and layout with emphasis on the application of menu mix, inventory efficiency, seasonality, and merchandising for foodservice operations. Included in this course is an emphasis toward concept development via menu driven components, product utilization, and recipe development. A menu, its recipes, and it’s costing are be required for completion of this course. Introduces students to the A La Carte kitchen, emphasis is on “a la minute” method of food
preparation, plus dining room service standards. Industry terminology, correct application of
culinary skills, plate presentation, organization, and timing in producing items off both a fixedprice menu and a la carte menu are stressed. The principles of dining room service are practiced and emphasized. The philosophy of food are further explored and examined in light of today's understanding of food, nutrition, and presentation.

Students will further develop skills acquired from Introduction to Baking and Introduction to Pastry by adding several bread, pastry and cake variations to their expanding repertoire of skills. In this class, students learn to make bread form three classic mixing methods: Straight Dough, Sponge Dough, and Poolish. Production of specialty and artisan bread is maintained daily including hearth breads, whole grain breads, sourdough, flat breads, and brioche. Students explore laminated dough and its applications, both sweet and savory.

This course segments the specific management opportunities and challenges in managing a bar, lounge, or foodservice establishment serving alcoholic beverages. Significant product knowledge orientation and sampling as well as cost control and purchasing, production and service issues are addressed. Emphasis is on spirits, mixed drinks, merchandising liquor and liqueurs, micro-brewed beers, beverage controls, storing and valuing alcoholic beverages, the contribution of alcoholic beverages to profits, and the liability and consumer dimensions of alcohol service.

This course enables students to identify the major categories of textiles, including knits and wovens for digital rendering. This course combines the use of paint as well as mixed media and focuses on rendering the human figure. Lectures, research assignments on contemporary and master paintings, painting for traditional animation, and sketchbook assignments further enhance the student's understanding and application of color theory, design, and the ability to master visual problem solving. Demonstrations and critiques stress the successful use of the paint medium, design, and color theory when composing the figure. [Prereq: IND4469C] IT3860 Automotive Design In this course students use the methods of the Automotive Designer to develop a vehicle design. Lifestyle research is utilized to evaluate a current vehicle package to create a unique concept. Marker renderings lead to a fifth-scale line drawing and clay model for presentation. [Prereq: IT1514]
