CU1501 Latin Cuisine
This course emphasizes both the influences and ingredients that create the unique character of selected Latin cuisines. Students prepare, taste, serve, and evaluate traditional, regional dishes of Mexico, South America, and the Caribbean Islands. Importance will be placed on ingredients, flavor profiles, preparations, and techniques representative of these cuisines.

CU3018 Legal Issues in Foodservice
This course focuses on Hospitality Law and its myriad of case studies, legislation, and statutes governing the industry. This course is designed to give the student an excellent overview of law, combined with a historical perspective and present-day application to the industry. This course blends foodservice applications with professionalism through a case-study approach. Students are given real hospitality cases and applications and asked to use problem-solving techniques to determine possible outcomes.

CU4028 Legal Issues and Ethics for Culinarians
The course is designed to give the student an overview of legal issues arising in the foodservice environment. The students will examine laws pertinent to the hospitality/food service industry and will investigate the relationship of these laws to the administration of a service organization. This course also identifies common ethical dilemmas encountered by culinarians; introduces the student to the foundations, purpose, and content of ethical codes and approaches to ethical decision making.

CU4015 Leadership in the Foodservice Industry
This course focuses on identifying the characteristics of leaders. It reviews how you can identify, develop and improve these skills through reading, exercise and practice opportunities. Students learn the seven habits of highly effective people, the importance of
change implementation, communication, empowerment and goal setting as the foundation for decision making.

CU4033 Leadership and Organizational Development
Students examine leadership, organizational management and culture, focuses on the role of the mangers as facilitators of change within the organizations. The course emphasizes the concepts of motivation, interpersonal relationships, group dynamics, leadership, and organization culture. Examination of leadership styles, development of strategic plans, and critical problem solving in the hospitality industry are covered in the course.

GX3100 Level Design
Students are introduced to the level editor for an existing game engine.Working with the elements and tools within the editor, students create and modify aspects of a game level. Using concepts from the course Game Design & Game Play, students analyze, break down and improve game play aspects of the level. [Prereq: DIG1711C]

ART2330C Life Drawing
This course introduces the student to drawing the human figure from life. The course focuses on drawing the figure in proportion in a manner that is anatomically convincing, with attention to rendering and shading. Concepts of gesture and contour drawing, negative and positive space, sighting, and contrast are reviewed. [Prereq: ART1300C]

Introducing students to the basic concepts and principles of lighting for photography, the course emphasizes the need to recognize and to control the qualities of natural and artificial light when creating a quality photographic image.
