HFT2852 Management by Menu
This course prepares future food service managers by giving a clear picture of the important role menu planning plays within operations. It covers topics ranging from menu development, pricing, and evaluation to facilities design and layout. Students will benefit because good menu development is crucial to the success of any foodservice operation, i.e., a planning tool, source of operational information and a merchandising method for reaching patrons.

CU4021 Management Externship
Students work on-site in ‘real-world’ environments focusing on hospitality management skills and competencies required for successful operation of a foodservice facility. A guided study driven by instructor mentorship, student participation, and employer sanction has the student reporting weekly, in written and oral form, logging impressions and experiences of what makes an operation succeed. The course includes assignments regarding the use of forms, equipment, and training and operational manuals found in a foodservice facility.

Students observe and participate in the supervisory operation of a successful foodservice

CTE1760C Manufacturing Apparel Concepts
This course introduces students to manufacturing processes. Students develop a working knowledge of terms, methods, and an understanding of production operations. By the end of the course, students are able to apply these concepts to their own uses. Students study various production-time and quality-assurance methods. Students begin to integrate their knowledge, skills, and understanding of the design process to develop designs for boats and yachts. Students use concept sketches, mechanical drawings, and models to create form, color, and design detail. Ideas are analyzed to determine creative solutions in the marine environment.
