CU4029 Quality Service Management and Training
This class will examine the role of service in the food service industry and explore how to give quality customer service. Service systems and training programs in quality operations will be examined through the use of case studies and hypothetical scenarios. The course will cover employee training and development from both a strategic and operational perspective. The class will culminate by examining Charlie Trotter’s service standards in what is often the best-rated restaurant in the United States.

This course explores the various career opportunities in Quick Service Food Operations.
Emphasis is placed on low- to mid-range foodservice, cafeteria, retail take-out units, and
franchised operations. Performance issues are also examined in the areas of consistency,

Students study the sociological perspective in minority-majority relations, assimilation ideologies, dynamics of prejudice and discrimination, biological, historical, and sociological explanations of ethnicity. Emphasis is placed on the definition and understanding of how race and ethnicity are constructed, the importance of culture, and the experiences of various racial and ethnic groups. RTV1308C Radio Journalism
(offered spring and fall quarters)
This course emphasizes broadcast newswriting concepts. It begins with the mechanics of writing and then adds broadcast style and story construction guidelines. The students then use what they have learned to produce actual radio news programs under deadline.
