
THE ART INSTITUTE OF PITTSBURGH PROUDLY ANNOUNCES THE OPENING OF TASTE OF ART
Every Monday, Tuesday and Wednesday from 11:30 to 1 p.m., the ninth floor restaurant at The Art Institute of Pittsburgh comes to life for 16 students practicing the ultimate culinary experience…putting their skills to the test with real paying customers.
“Taste of Art” delivers a luncheon menu designed with classical recipes and contemporary presentation. The diverse menu was carefully designed by Chef Randy Russell, CEPC. Russell is the first to teach the course at The Art Institute and aims offer items that will both challenge and showcase the student’s skills and be attractive to the dining public. “That means there’s everything from White Peach Lemongrass Consomme to Chicken Satay with Gado Gado to our signature cheeseburger,” said Russell. “But you better believe it’s the best burger in town.”
All menu offerings are created from scratch, including all breads, and of course, the desserts. Visitors can enjoy a sweet ending such as the Poached Pear with Medjool Dates, Quinoa Tuile and Candied Ginger Sorbet or go with a simpler approach such as the homemade banana pecan ice cream.
The A La Carte course enables the students to rotate through several critical restaurant positions during the 11-week study, including: Sous Chef, Sautee Chef, Grilladon, Entremetier, Garde Manger, Patissier, Tournant, Waitstaff and Maitre’D. For associate degree culinarians, it’s the final class of the program. For those enrolled in the bachelor’s degree in Culinary Management, it’s the final hands-on culinary course before moving into management studies.
Students consider the course quite a challenge. “In our externships, things are already established, meaning that we get good experience in our area of focus, but we don’t have to worry about what everyone else is doing,” said Marina Rubio, Culinary Management student. “Here, we are working together like a family…like pioneers with the goal of getting this off the ground.” Rubio is the Patissier at Taste of Art. Her favorite item on the menu is her Chocolate Bourbon Terrine.
