“Chefs in Training; Silicon Valley Orders up an Institute for the Culinary Arts”
The fresh faces of tomorrow’s culinary masters are being unveiled at The Bistro, the student-run dining facility at The International Culinary School at The Art Institute of California —Silicon Valley, a campus of Argosy University. The menu will be created by the chef and students in the A la Carte class, and will change seasonally. Flavor influences will come from our American Regional, Latin American, World Cuisine, Asian Cuisine and Classical European Cuisine classes, with baked goods produced in our Introduction to Baking and Introduction to Pastry classes.
As part of our green initiative (we are a Santa Clara County certified Green Business), our menu has been developed under the 150 mile concept: we will source our proteins and vegetables from local, sustainable sources within a 150 mile radius. These items and their sources will be identified on the menu. We are pleased to add items from Full Circle Farm to our recipes this term. Veronica Foods, a Bay Area company, has partnered with us to supply all of our kitchen oils.
For the current Spring 2013 quarter, The Bistro is open for lunch every Thursday and Friday from 12:00pm to 3:00pm. The last day of service for the Spring quarter is Friday, May 31st, 2013.
