Bocuse d’Or Qualification Winner Chef David Wong Joins Team of International Culinary Instructors

Canada’s 2007 representative for the internationally renowned 2009 Bocuse d’Or competition in France is bringing his award-winning talents into the classroom. The International Culinary School at The Art Institute of Vancouver is proud to welcome Chef David Wong as a full-time chef instructor beginning in January 2008.

Chef Wong returns to his native British Columbia after completing his now five-year tenure with Fairmont Hotels and Resorts as Executive Chef at the Fairmont Hotel Macdonald in Edmonton, Alberta and previously as Executive Chef and Executive Sous Chef at the Fairmont Vancouver Airport. Since changing his career from social work to culinary arts, Chef Wong skyrocketed to the top of the culinary industry. He has won gold medals in seven culinary competitions to date, including the 2005 Le Salon Culinaire Mondial in Basel, Switzerland in which he competed as a member of Culinary Team Canada.

In 2009 the best chefs from 24 countries will compete in Lyon, France in one of the most demanding culinary competitions in the world, Bocuse d’Or. In 2007 Chef Wong won the opportunity to represent Canada in Bocuse d’Or after an intense qualification round in Gatineau, Quebec. In-between his teaching duties at The Art Institute of Vancouver, Chef Wong plans to train with “intensity and a high level of focus and attention to perfection” in order to prepare for the competition, and hopes that his experience as a chef instructor will help to teach him a greater sense of patience and understanding.

Although he began his culinary career at a few of Vancouver’s finest restaurants including the Pan Pacific Hotel, Creek Restaurant and the Delta Pinnacle Hotel, Chef Wong is looking forward to working in a different kind of kitchen: a classroom kitchen. He decided to pursue a career in the teaching profession because of the opportunity to help develop the skills and shape the minds of future culinary professionals. He is most excited to inspire his students to strive for the best, and of course, win a few gold medals along the way.
