On March 20, 2018, 19 aspiring chefs from local high schools gathered at The Art Institute of Philadelphia to demonstrate their culinary prowess and complete for full- and partial- tuition culinary scholarships that could help them further their culinary education and skills.
Inside the professional kitchen, the young chefs were given two hours to whip up two classic French dishes—a chicken with tournés potatoes, served in a brown sauce made from shallots and herbs, and then crêpes with chocolate sauce and pastry cream.
The culinary scholarships on the line were offered through the Careers through Culinary Arts Program (C-CAP), a national non-profit organization whose programs are designed to prepare underserved students for college and career opportunities in the restaurant and hospitality industry. In the Philadelphia region alone, C-CAP is in 17 high schools and serves over 1000 students in Philadelphia, Delaware County, and Western Montgomery County.
Students were selected to participate in the C-CAP competition at Ai Philadelphia based on their success at previous preliminary C-CAP competitions as well as their academic performance, personal essays, and their desire to pursue post-secondary culinary education and careers.
Once the students’ two hours were up, each dish was carefully assessed for taste and presentation. The judging panel featured 13 industry professionals and accomplished local chefs, including 3 C-CAP alumni, the C-CAP president, and the C-CAP founder.
All scholarship recipients were announced and recognized at The Union League of Philadelphia during a Regional Awards Breakfast on April 3, 2018. At the breakfast, The Art Institute of Philadelphia awarded Yasmeen Benitez from Mastbaum Technical High School a full tuition scholarship for the Associate of Science in Culinary Arts degree program.
