Las Vegas Alum Named Chopped Champion

Joyce Ann Bucad, a 2009 Associate of Science in Culinary Arts program graduate of The Art Institute of Las Vegas was named the Season 38, episode 10 winner of the Food Network show Chopped. The episode, titled “Doughnut Dash,” included these popular sweet treats in all three rounds and featured guest Martha Stewart, whose cooking shows Joyce had watched as a child growing up.

At the start, Joyce was one of four contestants vying for the title and a $10,000 prize, with one contestant eliminated each round until only she was left standing. In the appetizer round, the chefs were given a dozen donuts, corned beef brisket, Chinese celery, and mostarda, with just 20 minutes on the clock. From that eclectic mix, Joyce made a Chinese celery salad featuring a crispy doughnut crouton and corned beef brisket with a mostarda glaze. The judges were impressed, describing it as tremendous, absolutely delicious, and even perfection.

For her entree, Joyce was given three ring doughnuts, ground bison, rainbow carrots, and pastry cream, from which she produced an appetizing plate of bison tostadas with rainbow carrot slaw. Again, the judges praised the dish’s appearance and taste, calling her “really smart with flavors.” In the final round—desserts—Joyce delivered a third time, creating beautifully presented Yuzu doughnut holes stuffed with raclette and beet cream, ultimately leading to Joyce claiming first place in the competition.

Joyce is an assistant pastry chef in conventions and banquets at Mandalay Bay Resort and Casino. As a chef at one of the largest resorts in Las Vegas, Joyce says she is used to working fast to keep up with the demand at the resort. In addition to making pastries, she is also experienced with more savory dishes.
