“Taste of Peru” Workshop Hosted by Ai California—Orange County

The Art Institute of California—Orange County, in partnership with the Trade Commission of Peru, recently hosted a "Taste of Peru" workshop with Chef Ricardo Zarate. The event was open to culinary students at the school.
The Trade Commissioner opened the program by sharing the history and cultural aspects of gastronomy in Peru. Chef Zarate then presented native Peruvian ingredients and taught students how to make classic Peruvian dishes, including the ceviche he is famous for. Participants received a copy of Chef Zarate's cookbook "The Fire of Peru: Recipes and Stories From My Peruvian Kitchen" and a special certificate from the trade commission.
Chef Zarate recently opened the restaurant Rosaline in West Hollywood. He is included in Pulitzer-Prize-winning food critic Jonathan Gold's "101 Best Restaurants."

This workshop was the first time the Trade Commission of Peru partnered with a culinary school to raise awareness for Peruvian gastronomy among emerging Southern California chefs.
