Culinary Student Competes in “Almost Famous” Competition

(DENVER, CO January 2016) - Melyssa Krutsche, a student in the Associate of Applied Science in Baking & Pastry degree program at The Art Institute of Colorado, was one of two students from The Art Institutes system of schools to take part in the annual San Pellegrino Almost Famous regional competition. Held on January 11, 2016 in Chicago, Krutsche produced and presented her signature dish to a panel of judges.
The San Pellegrino Almost Famous Chef competition consists of five regional events in the United States. On average, eight culinary students from each region and various culinary schools will meet at a host school. The regional winner of the two hour competition will then move on to the final competition. Each competitor must present ten consistent plates of their signature dish. The dish must be an original entrée incorporating style and imagination which could be presented and served at a fine dining restaurant.
Krutsche’s creation included a roasted pork tenderloin with shiitake mushrooms atop polenta, sauced with a pork demi-glace and roasted garlic gastrique. This was paired with agnolotti pasta stuffed with fig, pancetta and pine nuts, along with a vegetable mix of mini cauliflower, pearled carrots and snap peas with roasted lemon. With the support of her coach, Chef Shannon Hayashi, she said the experience "was an amazing learning opportunity."
