Introducing Evolve Bistro, the new student-run restaurant at The International Culinary School at The Illinois Institute of Art—Chicago. Evolve Bistro captures the essence of our students' culinary evolution and is the pinnacle of their culinary education. Evolve Bistro continually changes menus, through seasonality, ethnic cuisine, and student body.
Under the supervision of Culinary Director Chef Elizabeth Sweeney, Chef Jennifer Brooks-Stadler and Chef Sabre Tyler, students create dishes for a small plates concept that represents a variety of cultures and cooking styles. Students run all aspects of the dining room with a bistro ambiance. From food ordering and preparation to guest seating and serving, Evolve Bistro is a complete instructional environment for students that offers a quality dining experience to its patrons.
Throughout this quarter we are pleased to introduce you to foods and flavors from around the globe with a small plate concept.
We will be serving from this menu February 3 - February 12, 2016.
