The Culinary program at The Art Institute of Colorado won First Place at the 19th Annual Beaujolais and Beyond Festival, November 16, 2017.

A fundraiser for the French Chamber of Commerce, the event celebrated this year’s Beaujolais Nouveau wine. Food and wine enthusiasts sampled a range of products. The judges selected The Art Institutes appetizer as the best dish, which scored 56 out of 60 possible points.

Designed to showcase French favorites, the plate presentation included:

• Duck Profiterole

• Duck Liver Mousse

• Onion Marmalade

• Burnt Orange Caramel and Sea Salt

• Pickled Grapes

• Spiced Almonds and Pecans

Chef Instructor Jeff Kennedy and a number of students prepared and presented the winning dish. A close challenger at the event was Emma Nemechek, an Art Institute of Colorado Baking & Pastry graduate from 2009. As pastry chef for the Meritage of Omni Interlocken Hotel Resort and Spa, her Chocolate Torte was also a favorite.
