Great Lakes Bistro Restaurant

Great Lakes Bistro Restaurant is a student-run restaurant that's open to the public. Located at The International Culinary School at The Art Institute of Michigan, Great Lakes Bistro Restaurant serves as the dining lab for students in the culinary program, offering a unique combination of real-world experience and instructional content.

Under the direction of Chef Steven Simpson, culinary students nourish and delight patrons while taking the final steps on their path to becoming culinary professionals. From food ordering and preparation to guest seating and serving, Great Lakes Bistro Restaurant is a complete instructional environment for students that offers a quality dining experience to its patrons.

Culinary Team Wins “Most Unique Mac” at “Mac N’ Brews & Comfort Food” Competition Culinary Team Wins “Most Unique Mac” at “Mac N’ Brews & Comfort Food” Competition

A team from The Art Institute of Michigan recently competed in the “Mac N’ Brews & Comfort Food” challenge at The Royal Oak Farmer’s Market in Michigan. The team won the “Most Unique Mac” award. The winning dish, Tikka Masala Mac, was paired with pulled tandoori chicken, tamarind chutney, house-made paneer, crumbled naan, and cilantro.

The team was made up of instructors Chef David Koshizawa and Chef Adam Gardner, and students James Engelmann, Muffazal Miah, Micah Matheny, Kal Arnold, Leonett McKay, James Jouppi, and Sequoia Barney. All of the students are working toward an Associate of Applied Science in Culinary Arts from The International Culinary School at The Art Institute of Michigan.

The Art Institute of Michigan Design Club Creates Mural The Art Institute of Michigan Design Club Creates Mural

(Michigan, December 2015)  The Art Institute of Michigan Design Club, known as the Design Collective, was invited to Granite City Brewery in Troy, Michigan to create a 30 foot mural to cover one entire wall of the restaurant. On November 16 and November 17, with paint and brushes in hand, students got to work from 10:30 p.m. each night until morning to create the masterpiece. The restaurant provided food to feed the students as they painted.

The Art Institute of Michigan Teams Up with the Rachael Ray Show to Provide Cooking Lessons The Art Institute of Michigan Teams Up with the Rachael Ray Show to Provide Cooking Lessons

The Art Institute of Michigan is teaming up with the Rachael Ray Show to provide cooking lessons to the students enrolled at Downtown Boxing Gym Youth Program. During filming of the Rachael Ray Show’s Thanksgiving episode, on Monday, November 16, Ray unveiled a completely renovated kitchen for the students, complete with new appliances and a study space. To help Downtown Boxing Gym Youth Program get the most out of this new kitchen, The Art Institute of Michigan is going to provide four lessons/demos on healthy eating and nutrition at the gym throughout the next year. 

Three culinary instructors from The Art Institute of Michigan appeared on the show to announce the gift of the cooking lessons, and the episode will air Wednesday, November 25. The Art Institute of Michigan Places at SkillsUSA State Championships The Art Institute of Michigan Places at SkillsUSA State Championships

(Michigan, May 2015)  Culinary students from The Art Institute of Michigan, a branch of The Illinois Institute of Art – Chicago, participated in the SkillsUSA State Championships on March 28, 2015. Coached by Chef Dave Balla and Chef Dave Koshizawa, the students took wins in four categories:  Commercial Baking, Competitive Hot Food, Restaurant Service and Job Skill Demonstration.  Gold medal winners will participate in the National Championships in Louisville, Kentucky at the end of June. This is the sixth year the school has sent students to the national version of an international competition.
