Program Overview

In the Culinary Arts program, you’ll gain practical experience in the kitchen while studying the business of cost control, sanitation and safety, menu and beverage management, nutrition, and kitchen management. You’ll learn to produce food quickly and in quantity while working with others. Graduates are prepared to seek entry-level employment such as line cook and pantry cook (garde manger).

The Art Institute of Houston Grad to Cook-Up Dinner at ChefDance The Art Institute of Houston Grad to Cook-Up Dinner at ChefDance

(HOUSTON, TX January 2016) – Chef Jonathon LeBlanc, a 2003 graduate from The Art Institute of Houston with an Associate of Applied Science in Culinary Arts, is participating in ChefDance, a culinary event that coincides with the Sundance Film Festival. This year’s event features five chefs from across the country, with Chef LeBlanc creating the dinner on Tuesday, January 26. Below is a link to the schedule of events. 

ChefDance was developed in 2004 and since that time has worked with more than 70 celebrity chefs. ChefDance dinners are by invitation only.

The Art Institute of Houston Partners with Spring Branch Independent School District The Art Institute of Houston Partners with Spring Branch Independent School District

(HOUSTON, TX January 2016) - The Art Institute of Houston has partnered with Spring Branch Independent School District to provide chef training to students at The Guthrie Center, an elective campus offering career training and college preparation.  There are 25 high school students in the class, all with at least one year of culinary instruction.  Faculty from The Art Institute of Houston will provide instruction, inspiration and give these students the opportunity to reach the next level in their training.

As part of the partnership and sponsorship, The Art Institute of Houston will provide chefs coats, pants, hats, neckerchiefs and aprons to all students.  Lessons being offered include, but are not limited to, knife skills, pasta cookery, roasting lab, stewing lab, mystery basket skills and a final luncheon at the end of the 23rd week.

The Art Institute of Michigan Teams Up with the Rachael Ray Show to Provide Cooking Lessons The Art Institute of Michigan Teams Up with the Rachael Ray Show to Provide Cooking Lessons

The Art Institute of Michigan is teaming up with the Rachael Ray Show to provide cooking lessons to the students enrolled at Downtown Boxing Gym Youth Program. During filming of the Rachael Ray Show’s Thanksgiving episode, on Monday, November 16, Ray unveiled a completely renovated kitchen for the students, complete with new appliances and a study space. To help Downtown Boxing Gym Youth Program get the most out of this new kitchen, The Art Institute of Michigan is going to provide four lessons/demos on healthy eating and nutrition at the gym throughout the next year. 

Three culinary instructors from The Art Institute of Michigan appeared on the show to announce the gift of the cooking lessons, and the episode will air Wednesday, November 25. The Art Institute of Houston Participates in the International Risotto Festival The Art Institute of Houston Participates in the International Risotto Festival

(Houston, October 2015) On November 8, 2015, The Art Institute of Houston is participating in the 11th International Risotto Festival.  The campus will have one chef instructor and four students creating a unique recipe for tasting at the Risotto Festival.  In all there will be 18 chefs competing.  

Fashion students are also designing Barbie clothing to be put on Barbie dolls that will be auctioned off during the event’s auction.

The campus will have approximately 20 faculty and staff volunteers and approximately 25 student volunteers, representing the Interior Design, Photography, Digital Filmmaking & Video Production, Culinary Arts and Fashion Design.

The event benefits The Scarlett Fund for Pediatric Cancer Research at Memorial Sloan Kettering Cancer Center.

Program Description

The Art Institute of Houston offers a four-quarter diploma program wherein students are intensely trained for entry-level career opportunities related to the culinary arts. The mission of the Culinary Arts program is to provide an environment for students to become learners who possess the skills, knowledge, creativity and ethical values necessary in the rapidly changing, culturally diverse culinary, restaurant and catering professions.

Overall the intent of the program is to have experienced industry professionals impart their knowledge and technical acumen to the students. The approach to education relies heavily on actually participating in projects that are practical and technical in scope. All classroom activity relies heavily on a philosophy of total and personal immersion into the subject. The student is exposed to the business aspects of culinary arts, along with intensive, practical, hands-on training.

The primary focus of this curriculum is to become knowledgeable in the culinary arts with the potential to progress along a successful career path. The technical studies in this program are supported by the life skills the student will be exposed to in the liberal arts and sciences program courses.

What You’ll Study

Culinary students come to The Art Institute from different levels of experience but all share the same thing — a passion for cooking. The Art Institute of Houston’s Culinary Arts program is accredited by the American Culinary Federation Accrediting Commission. The ACF is the oldest chef organization in the United States dating back to 1929. Our college’s culinary program is one of only 114 culinary schools in the country to receive this honor. In the diploma program, students learn traditional, fundamental cooking skills, followed by labs in American Regional Cuisine, Baking & Pastry, and Garde Manger. In addition, safety and sanitation, purchasing and cost control, supervision skills, and dining room operations are covered. For the associate’s degree, students have additional labs in International Cuisines, Art Culinaire with advanced cooking and presentation skills, and the À la Carte Kitchen, where they run the dining lab called “Courses.” In both programs students work an internship in a quality food service operation to gain practical experience and learn the realities of the food service industry. The associate’s program culminates with a Capstone project, which is a complete business plan to open a restaurant that seats at least 100 guests.

Students need to meet all requirements. The Art Grant is not offered at all Art Institute schools and the grant amounts vary by location; check with the school you’re considering attending for exceptions and details.
