Preps Items, Cooks, and Assists with Clean-up in the Kitchen

Brandon Shieh is a line prep and cook at Pine Haven Café and Catering in Upland, California. He is responsible for prepping items, cooking, and assisting in the kitchen clean-up. “[The best part of my job] is being able to work with so many different food products—and creating so many dishes,” he says.

He counts Iron Chef Morimoto, Chef Gordon Ramsey, and Chef George Tucker as his culinary inspirations. Brandon adds that his most proud professional moment was creating a new menu item that was approved by the café’s head chef. He advises current students to be prepared to work long hours and to always be humble.

Brandon, who in 2016 earned an Associate of Science in Culinary Arts from The Art Institute of California—Inland Empire, says that his education made him aware of the reality of the culinary world. “[It provided me with] the know-how to survive in the kitchen.”
