Gourmet Gallery Restaurant

Gourmet Gallery Restaurant is a student-run restaurant that's open to the public. Located at The International Culinary School at The Art Institutes International Minnesota, Gourmet Gallery Restaurant serves as the dining lab for students in the culinary program, offering a unique combination of real-world experience and instructional content.

Under the direction of Chef Michael Autenrieth, culinary students nourish and delight patrons while taking the final steps on their path to becoming culinary professionals. From food ordering and preparation to guest seating and serving, Gourmet Gallery Restaurant is a complete instructional environment for students that offers a quality dining experience to its patrons.

The Art Institutes International Minnesota Grad Wins Chicago's Cochon 555 The Art Institutes International Minnesota Grad Wins Chicago's Cochon 555

(Minnesota, May 2015)  The Art Institutes International Minnesota graduate, Nicole Pederson, won Chicago’s Cochon 555 competition on Sunday, April 26. The competition takes place in cities across the country, with each city’s winner going on to compete in the Grand Cochon on June 20 in Colorado. 


The Chicago event featured five local chefs, and each chef was given a heritage breed pig, with which they were challenged to produce multiple courses. Cochon 555 was originally created in 2008 in response to the lack of education around heritage breed pigs.


For the competition, Nicole created Eastern Thai Rice Sausage, Pork Belly Huaraches, Pickled Pig Part Pani Puri Poppers, Pork Loin Salad, Pork Au Feu and a pork Candy Bar. Nicole is a 2000 graduate with an Associate of Applied Science in Culinary Arts and is currently a chef at Found.

Culinary Instructor to Head to DC to Cook and Lobby for Childhood Hunger Culinary Instructor to Head to DC to Cook and Lobby for Childhood Hunger

Chef Seth Daugherty, a culinary instructor at The Art Institutes International Minnesota, will head to Washington, DC this month to participate in the Sips & Suppers fundraising event and to lobby on Capitol Hill in regard to childhood hunger, a cause he is passionate about.

Sips & Suppers is a two-evening event, January 24 & 25, including Sips - a cocktail reception that features top chefs, artisans and mixologists and Suppers - an evening of renowned chefs preparing dinners in homes across DC. Chef Daugherty will participate in both evenings, partnering with Uplands Cheese for the Sips evening on January 24. The event hosts renowned chefs from all over the world and benefits DC Central Kitchen and Martha’s Table.

On Monday, January 26, Chef Daugherty will attend a reception on Capitol Hill, where he will lobby in regard to childhood hunger. The reception will welcome the 114th Congress and introduce the new members to DC Central Kitchen. The event will also highlight the issues of poverty, hunger and homelessness.

In 2012, Share Our Strength named Chef Daugherty Advocate of the Year. His work includes the launch in Minnesota of Share Our Strength’s Cooking Matters, an educational program that works with families to help them better understand the importance of nutritional planning and healthy eating.

Ben Spangler, who graduated from Ai Minnesota in March, 2009 with his Associate of Applied Science degree in Culinary Arts, was featured on King of Cones on August 11, 2014 on the Food Network.  Ben is currently the Pastry Chef at Zelo in Minneapolis.
