Pittsburgh Team Wins Urbani Tartufi Truffle Competition

The team from The Art Institute of Pittsburgh recently was awarded the top prize at the Urbani Tartufi Truffle Competition in Italy. Student Rachel Walton, who is working toward an Associate of Science in Baking & Pastry, and 2016 graduate Samantha Santti, who earned an Associate of Science in Baking & Pastry, recently returned from their international culinary adventure.
Coached by Chef Shawn Culp, The Art Institute of Pittsburgh’s culinary department chair, Walton and Santti created a duck breast with truffle mousseline forcemeat. The dish also featured crispy skin crust served on carrot puree with a rich duck jus, sautéed root vegetables and a twice-baked potato garnished with thinly sliced chives and minced truffle.
A jury of chefs and other professionals from different regions of Italy selected the top teams. Santti and Walton may have their recipe developed as a new Urbani Tartufi product.
