Winner of National Peanut Butter Lover’s Month Recipe Contest Announced Winner of National Peanut Butter Lover’s Month Recipe Contest Announced

National Peanut Board (NPB), in partnership with Culinary degree programs at The Art Institutes system of schools launched a recipe contest to celebrate National Peanut Butter Lover’s Month in November, encouraging students to develop a creative peanut butter recipe. The Grand Prize-winning recipe was a Roasted Peanut Tuile with Peanut Butter Mousse and Peanut Butter Candied Bacon submitted by student Dustin Godfrey from The Art Institute of Jacksonville, a branch of Miami International University of Art & Design, in Florida.

Contestants were required to use at least a quarter of a cup of peanut butter, and/or powdered peanut butter, and had to submit a written recipe along with a photo of their dish. National Peanut Board received 16 entries from students at The Art Institutes system of schools across the country, and the recipes ranged from savory to sweet.

As the Grand Prize student winner, Godfrey will have the opportunity to choose cooking or baking equipment valued at $500. NPB judged the recipes based on taste, execution, creativity and presentation.

“Peanut butter and peanuts are my favorite food, and always have been,” said Godfrey. “When I found out about the competition, I had some great ideas about how to use peanut butter and I was really excited to create a recipe.” The inventive and indulgent dish incorporated both powdered peanut butter and creamy peanut butter.

Godfrey, from Chipley, Fla., is in his third year at The Art Institute of Jacksonville and is on track to earn a Bachelor of Arts degree in Culinary Management as well as a Baking &Pastry diploma at the end of next year. Cooking became a passion for Godfrey at a young age.

“I’ve always liked to cook. My dad taught me how to cook when I was little, and after he passed away I continued to teach myself new techniques in the kitchen,” said Godfrey. He developed an interest in culinary management while working part time at a catering company during college. He enrolled in The Art Institute at Jacksonville to pursue his ambitions, and plans to eventually open up a food truck with his girlfriend who is also studying at The Art Institute of Jacksonville.

“We are going to call it Dizzy’s, and we’ll serve gourmet sandwiches with house-made charcuterie, artisanal breads, and specialty pastries and confections,” said Godfrey. Asked if peanut butter will be an ingredient on the menu, Godfrey exclaimed, “of course!”

National Peanut Board also awarded two Runner-Up winners each with a $200 gift card. Kandy Hall, a student in the Associate of Applied Science in Baking and Pastry degree program at The Art Institute of Phoenix, submitted a Peanut Butter and Mascarpone Mousse in a Florentine Shell, and Tanya Neuerburg, a 2015 graduate of The Art Institute of California – Sacramento with an Associate of Science degree in Baking & Pastry, submitted a Caramel Delight Cookie Butter spread. All 16 entrants will receive a Peanut Prize Pack from National Peanut Board.
