Ai California—San Diego hosts Prostart Educator Conference

On October 14, 2017 The Art Institute of California-San Diego, a campus of Argosy University, will host the Prostart Educator Conference. For the past several years, The Art Institute of California—San Diego has started the conference with a tour of a local product facility such as Catalina Offshore or Specialty Produce and continued with a hands-on workshop using the product in the professional kitchens on campus. However, this year the campus will be hosting a more involved hands-on session that will take up the better part of the day. Educators will be participating in a Whole Hog workshop. The group will breakdown half a pig and then create chorizo, sausage, dry cured bacon, and debone and brine ham.
The Art Institute of California—San Diego works with the California Restaurant Association to participate in this program, which offers hands-on trainings to local culinary educators working with Prostart. “Prostart is a two-year, culinary arts and hospitality management program developed by the National Restaurant Association Education Foundation. 127 public high schools in California use the curriculum reaching 9,000 students.” - http://www.calrestfoundation.org/prostart.html
