What would you say is the defining moment in your life when you knew you were destined to become a creative professional?

When I became Director of Food Services at University of San Francisco. I was given the flexibility to develop and market innovative food service concepts to enhance the resident board programs.

How do you weave your professional background into the classroom experience to provide an industry veteran's sense of the realities/challenges/opportunities of the profession?

I strive to incorporate real business challenges and solutions based on owning and operating 13 restaurants during 35 years in the industry. I like to stress values of honesty, integrity, and full legal compliance in an industry. The fair and honest treatment of employees, customers and vendors is critical to long-term success.

What is the real class assignment that exemplifies your approach to teaching and mentoring? Similarly, how does your approach in inspire each student to push themselves beyond their own perceived limits?

I teach the capstone class that requires all students to develop a complete business plan for a 100-seat restaurant. That has wide latitudes in developing their concepts. I personally guide them through the critical steps to this process and encourage them to be honest with themselves—sometimes, a well thought out business plan just doesn't work financially. When their numbers show this to be the case, it doesn't affect their grade and teaches them a potentially valuable lesson. Life is full of second chances.
