The Art Institute of Seattle Graduate in The Seattle Times

(Seattle, December 2015) Mutsuko Soma, a 2003 graduate from The Art Institute of Seattle with a Culinary Arts Associate of Applied Arts degree, was featured in The Seattle Times regarding her handmade buckwheat soba noodles.

Mutsuko grew up in Japan, where her grandmother always made soba for the family. However, she soon realized that the high-quality soba flour in Japan often came from buckwheat grown in Washington. Mutsuko believes she is the only one on the West Coast serving the buckwheat noodles regularly at a restaurant.  Included below a link to the article that includes a video of Mutsuko making the fresh soba noodles at her Wallingford restaurant, Miyabi45th.
