Culinary Students featured in Vancouver Sun, Headed to Italy
March 15, 2016
The Art Institute of Vancouver culinary students Pavlik Ricalde and Baily Allan were recently invited to participate in a 2-week training in Italy, where they’ll compete in a truffle-themed Culinary Contest in Memory of Paolo Urbani. Pavlik Ricalde is working toward a Culinary Arts Diploma and Baily Allan is working toward a Culinary Arts & Restaurant Ownership Advanced Diploma.
Ricalde and Allan’s truffle creations were featured in The Vancouver Sun—print, online, and blog. The truffle team will participate in a full immersion culinary course on Italian Cuisine at UDS (Università dei Sapori), in Perugia, Italy from March 30 – April 8. Then they’ll recreate their truffle-inspired recipes to be judged by a jury of chefs and professionals from the world of gastronomy. Three winning teams will be awarded first, second, and third prize. Urbani Tartufi reserves the right to market the first place creation as one of its own, new products.
